Favourite Recipe - Lemon Drizzle Cake

Hey guys! This recipe is defiantly one of my favourites ... Ever! It's so light, super easy and idiot-proof. Let me know what you think. 

130g of Butter
130g of Caster Sugar
2 eggs
Zest of a whole Lemmon OR 3-4 tablespoons of lemon juice
110g of Self Raising Flour (if you use the lemon juice you may need more flour)
For the glaze - 
2 1/2 tablespoons of lemon juice
2 table spoons of water
6 tablespoons of caster sugar 

*this recipe works better as a tray bake but it works just finest in a normal cake tin*

Method - 
1. Preheat the oven to 180 C or 350 F. 
2. Grease the cake tin or use grease proof paper.
3. Cream the sugar and butter together. 
4. Add each if the eggs seperatly and beat into the mixture. 
5. Sift in the flour. Make sure to get a lot of air in the mixture otherwise it won't rise as much. 
6. Put in the oven for 20 minutes. Use a metal skewer or knife to see when it's cooked. 
7. While its cooking, in a separate bowl add all the ingredients for the glaze.
8. As soon as the cake is out of the oven pour the glaze in so that the sugar melts in the cake. Let the cake cool and remove from the tin.
